My name is Jennifer, and I’m the heart, hands, and oven behind Wheatless Wonder, a Michigan-based cottage bakery born from a simple need: delicious baked goods that don’t compromise on flavor, texture, or joy—just because they’re gluten-free.
The Journey
It all started with a diagnosis. Four of my Six children have Celiac’s diseae (you know how these stories go), so gluten had to go. But store-bought options were either packed with preservatives, tasted like cardboard, or cost a small fortune. I knew there had to be a better way—and I was determined to create it in my own kitchen.
From experimenting with almond flour and arrowroot to late-night cookie trials that turned into triumphs, what began as a personal solution quickly became a passion. And passion, when shared, becomes purpose.

This blog is where I share the recipes I’ve perfected—gluten-free breads, cookies, muffins, cakes, and more—all tested in my home kitchen and made with real ingredients you can find at your local store. That means everything I sell is baked with care in my home kitchen, using ingredients I trust and methods I’ve honed.
